12 Vegetarian Pasta Recipes

12 best vegetarian pasta recipes

Craving pasta? Me, too! Here, youโ€™ll find twelve of my favorite pasta recipes, including classics like vegetable lasagna, stuffed shells and baked ziti. Youโ€™ll also find lighter pasta dishes for spring and summer, like my favorite pasta salad.

All of these recipes are fresh, hearty and vegetarianโ€”theyโ€™re proof that meatless pasta recipes can be filling and satisfying. The trick is to load them up with vegetables and finish them with an amazing sauce. I often opt for whole-grain noodles, which keep me fueled longer.

Lovely post! I can proudly say I made them all except for the kale pesto thing (and I donโ€™t know why because I adore kale and throw it into everything, from breakfast smoothies through lunch kale salads to your kale burritos or kale stir fry for dinner), but I think I will change that tonight. Your pastas are always lovely (I also often make the sun-dried tomato pesto pasta with SO MANY vegetables) and I am probably gonna visit this post way too often during the cold days coming.

Made the spicy sun dried tomato and broccoli pasta last night. I *know* I sound like a broken record, but it was delicious! I added a can of garbanzo beans โ€” yum! My husband wanted more pasta so I might play with the proportions a bit, but itโ€™s definitely a keeper. Thanks again, Kate!

    1. Kate

Thank you, Alexa! You can play that broken record as often as youโ€™d like here. :)
