“This potato salad was delicious! I love that it doesn’t have mayo in it. I took a big bowl to a local campaign rally and cookout. I noticed that a lot of people brought potato salad, but mine was the only empty bowl at the end of the evening. Thanks for a great recipe.” – Carolyn

“oh my goodness. this salad is SO addictive! I made a 4 person serving and my husband and I ate the whole thing up. We added some arugula and radishes to make it more of a dinner salad with a side of protein.” – Jaime

“Second time I’ve made this in a week. My wife said she could eat this every week. The flavors came together surprising well and loved the salty taste the Kalamata olives give the dish. It’s so easy to make and the leftovers taste almost better the second day.” – Steve

This is a great round up! Love that these are all no heat side dishes but packed with healthy veggies!
Wow!! You are gorgeous!! I love making vegan oats burgers and I haven’t found which is the most suitable and fancy side dish for them… YOU ARE ROCKING! You gave me 17 ideas to try :) xoxo
They all look so delicious I can’t decide which to try first! Although I think you may have meant “turn on the stove” rather than “recipe” in the opener… :) Really love your blog Kate, many of your recipes have been hits at our house and shared with my extended family as well! Keep up the good work and have a wonderful summer!
Every salad looks DELICIOUS. I love a good cucumber salad, but the green bean salad, quinoa salads, and cabbage slaw look wonderful too! I cannot decide which one I’d want to try first!
Loved the Spinach and Quinoa Salad … changed it up a bit and put it up on my little family blog, The Spice Garden … giving you a link and cred, of course! Next up on my list is that recipe for marinated chick peas! Lookin’ good to my taste buds !!!
