Avocado lovers, this roundup is for you! Iโ€™m sharing twenty-five of my favorite recipes featuring ripe avocado. Did you know that the avocado is actually a fruit? Avocado is rich and creamy, so itโ€™s the perfect tempering accent in fresh, bold and spicy dishes.

Weโ€™ll start with guacamole, of course, followed by a variety of Mexican-inspired avocado recipes, as well as creative salads, sandwiches and more. You wonโ€™t want to miss my avocado toast or fresh avocado salad. All of the recipes use raw avocado, as cooked avocado can taste overripe and unpleasant. Avocados are rich in monounsaturated fats, which are the good-for-you variety. Theyโ€™re also high in fiber and other vitamins and minerals, including potassium, magnesium and vitamin C. Adding avocado to your meals can improve your absorption of carotenoidsโ€”yet another reason to love the sweet potato, carrot, bell pepper and tomato combinations youโ€™ll find in the list below.

Avocado Tips

Ripe avocados are plump and yield slightly to a gentle squeeze. Avoid avocados that are wrinkled or mushy.

To speed ripening, place them in a paper bag with an apple or banana. Once theyโ€™re ripe, store them in the refrigerator to prolong their life.

To prevent browning once cut open, store them in a small container with a piece of onion, or with lime or lemon juice rubbed onto the cut side. The best way is to enjoy them promptly!
