Updated by Kathryne Taylor on May 16, 2024
Below, youโll find wholesome vegan meals made with affordable and protein-rich whole grains, beans, and nuts. Youโll also see plenty of fresh, colorful produce, and occasionally some tofu. No funny meat substitutes here.
As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off a sprinkle of cheese or a fried egg. Iโve enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.
I love the challenge of making my favorite recipes vegan, like when I figured out how to make the lasagna and enchiladas in my cookbook without the cheese. Honestly, the cheese-free variations are just as tempting as the originals. In total, the book offers 96 tested vegan/vegan-option recipes.
These recipes are only a small selection of the vegan recipes on Cookie and Kate. Browse the vegan recipe index to see them all!

I have looked through this list of recipes, and although there are some that sound quite good, none of the ones I looked at would work as a full meal for us. The one problem with all of them is that they do not contain enough protein to sustain us. I tried being vegan for a while and ended up being starved for protein. I have thought that maybe I didnโt understand how to structure my meals, but Iโm seeing now that it is very difficult to be vegan when one needs a high protein diet. For us, vegetarian meals that can include eggs, yogurt and cheese work much better. I was really hoping to find something on your list that would work. :-(
Iโm sorry you felt that way, Susan! I have vegetarian options that might work for you if that is what you are after.
what utter nonsense, starved of protein? you do realise some of the strongest animals (and people) in the world get more than enough protein through vegetables.I work out 5 days a week and never โneededโ cheese and milk to stop me from falling over from a protein deficiencyโฆ.. Amazing Recipes Kate! will be using some of them soon :)
I love your vegan recipes, Kate! I already had a few of these saved and just added a bunch more. Great post!

I donโt like garlic/onions. I find them repellent.
It seems that you canโt make a vegan dish without garlic and onions.
How come?
Hi Jerry! Iโm sorry to hear that. Garlic and onions provide a lot of great flavor, in my opinion. But, since you donโt like them you could omit in the dishes.
looks delicious. Can you pls send me Breakfast, Lunches, Dinners and snacks recipes? am looking for healthy non refine and gluten free recipes.Thanks. by hte way, what is the name of your vegan book?
Hi Art! Here is more on my vegetarian cookbook: https://sooka.info/love-real-food-cookbook/%3C/a%3E. I just posted a great brunch/breakfast https://sooka.info/what-to-make-for-your-holiday-breakfast-or-brunch/%3C/a%3E. I hope this helps!
Thanks for your reply and info you sent, however there is so much info and pop outs that is almost impossible to focus on what exactly to reed and follow,to much info about others dishes and pictures plus your dishes are not 100% vegan, gluten free and unrefine sugar free.I also asked about the name of your book wich I would like to buy rather than waisting time trying to absorb the tones of info your website puts all in one small window.
Kathryne, Your recipes are my absolute favorite and I love your cookbook, but I am endeavoring to be plant-based. I would LOVE to be able to buy a vegan/plant-based cookbook of yours.
Hi Sherry! Iโm glad you love my recipes. I donโt have any plans to do another cookbook, yet. :)

This has been an incredible hit with my family! My husband is a meat and potatoes man but absolutely loves it, and my 12 yo daughter asks for me to pack for her in her Thermos for lunch at school. Iโll even throw an egg on it and make it a breakfast or brunch over a bunch of tortilla chips!
Just wanted to say I LOVE your recipes! Thanks so much for doing what you do!
