I’ve been sharing recipes for three years now, and I only have two granola recipes to show for it. I resisted making my own granola for a long time because I’m powerless in the face of ready-made snacks like chips and granola. They call my name from the cabinet and insist I eat a handful whenever I see the bag. That is why there are only two granola recipes on this blog so far.

I’ve found that if I make my own granola, though, I want it to last for a while. I also keep the bag in the freezer, which seems to dampen the granola’s power over me. Granola makes plain yogurt much more interesting, especially when topped off with fresh fruit.

This granola recipe is a simple one: honey-sweetened oats with a hint of spice and warm coconut flavor. I adapted it from my gingerbread granola. It’s a good base recipe to play around with—I’ve added substitution suggestions in the recipe below. The granola browns more quickly when I make it with honey rather than maple syrup, which is typical of honey-sweetened baked treats, so keep an eye on it during the last few minutes of baking.

A simple recipe for granola made with honey, almonds, coconut oil and spices. This granola is great for breakfast or a snack. Recipe yields 8 to 9 cups of granola.

Ingredients

  • 4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
  • 1 ½ cups raw slivered almonds (or other nuts*)
  • 1 teaspoon fine-grain sea salt (if you’re using standard table salt, scale back to ¾ teaspoon)
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ½ cup melted coconut oil or olive oil
  • ½ cup + 1 tablespoon honey or maple syrup
  • ¾ teaspoon vanilla
  • ½ cup chopped dried apricots (preferably the Blenheim variety)
  • ¼ cup chopped dried cherries, cranberries, raisins or currants

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a half-sheet pan with parchment paper. In a large mixing bowl, combine the oats, nuts, salt, cinnamon and ground ginger. Stir thoroughly to combine.
  2. Stir in the oil, honey and vanilla. Turn the granola out onto your prepared pan and use a large spoon to spread it in an even layer. Bake for 22 to 26 minutes, stirring halfway. The granola should be turning lightly golden (keep an eye on it as honey tends to brown). The granola will crisp up as it cools.
  3. Let the granola cool before stirring in the chopped fruit. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or keep it in the freezer for longer shelf life.

Recipe adapted from my gingerbread granola.

*Preparation tips: If you are using large, whole nuts (pecans, walnuts, etc.) follow instructions as directed. If you are using small nuts or seeds (sunflower seeds, pepitas, etc.), wait to stir them into the granola until you remove it from the oven halfway through cooking.

Make it vegan: Instead of honey, use maple syrup as your sweetener.

        Thanks for the granola recipes, they’re amazing! I made the ginger one first and all I had for any nut/seed and dried fruit was pumpkin seeds and raisens. When I tasted it I thought it was the most delicious thing I’d ever had. I wasn’t sure if it was just me or this granola was amazing so I gave some to my husband and he agreed it was over the top delicious. So I made more (my husband and I ate all of the first batch) and gave some to our Daughter and her husband, and same reaction, they both were obsessed with it! I had one more person to test it on though, a friend of mine used to get granola from this cute little cafe that made it themselves, and she would drive 20 mins just to get it. She txted me after she tried some of this one I made and said it’s the best she’s ever had including the one from the little Cafe! So thank you again for sharing your recipes we are obviously enjoying them so much!

    Made the Healthy Granola and it was delicious, added coconut flakes half way thru the baking cycle. Used Walnuts, sunflower seeds, maple syrup,chopped apricots and pumpkin pie spices. Delicious!

    I made this recipe about 3 weeks ago, it lasted two weeks and then we’ve been without for a week. I’m up before the husband and toddler on a Saturday so that I can make it again and surprise them- my toddler loved it! We add it to smoothie bowls with and she would steal it to snack on (so would I but I’m 6 months pregnant so totally acceptable to snack ).
    We try to make everything we can homemade, I’ve wanted a granola recipe for a while now and this is a keeper!!
    So thank you for posting this recipe all the years ago that you did – my family (and I) are very happy you did!

    I’m a little late to this game, but I MADE THIS GRANOLA 3 DAYS AGO and its SOOOOoooooo good! I do keep eating it by the handful though so I’ve had to throw it in the freezer as well. The spices are perfect! I had to adapt the recipe a little because I was short on some supplies, but it all worked out. I skipped the dried apricot only because its stone fruit season and fresh is better! Thanks for this!

    hi i have been making granola using your recipes for quite some time and always turns out fantastic. this time however somehow i added less honey as well as coconut oil and it is tasting a little bland. it is already quite crunchy and am afraid that baking again will make it rock hard. any alternatives. option of adding honey on top while eating is difficult as will be packing for my son for college

    Hey lovely blog you got here, just a question.

    I’ve heard heating or cooking honey crosses out the benefits and could make it bad … know anything about it.

    I love the recipe and I’m so tempted but I really want the end result to be healthy you see.

    Kate, since I have made this granola recipe at least once a month for the last year, its about time I tell you how much I love it. I put it into containers and freeze them and pull out about one a week to put on my homemade [in an instant pot] Greek yogurt, so, so good!

    I stick to the basic recipe and for the 1.5 cups of nuts; I add 1/2 cup of three different kinds of nuts. The latest is slivered almonds, chopped walnuts and pepitas. I have used pistachios, sesame seeds, chopped pecans and peanuts. I don’t add the dried fruit because I always use frozen fruit. I use olive oil because it has less saturated fat than coconut oil and I always mix everything together from the very beginning, walnuts to coconut flakes and sesame seeds, they all get dumped in the bowl at the same time. I use honey and a silicone mat and my granola is always clumpy. I have to break it up a lot, to get it into two cup containers. This is the only granola recipe I use and it is absolutely the best. I have given this link to many, many people. If I could I would add a picture of my beautiful, delicious granola. Yum, yum.

    This recipe is georgeous!!!! I’ve tried this hundred of times and the result is always I add sesam seeds and sometimes change the honey by crushed dried figs.

    One of the trays came out great, unfortunately the other one burnt.
    Not your fault, this is a great recipe. I put it in two trays, one on the middle rack and one on the top rack. I used honey and your note about checking it early must be spot on because that is where I failed! I set the timer for 22 minutes in my convection oven and meant to check it in 10 minutes, but forgot! I love the tray that came out just right!!! Now what to do with the rest, my dog Tia has her eye on it. Hmm, maybe I will convert it to dog biscuits.

    I know I am late in the game to rate this recipe. This is one of the very best granola recipes EVER! A staple in our backpack and panniers for hiking and cycling adventures. Fats, protein and good ole’ carbohydrates. It fuels the body for sure! I have experimented with tried out tahini as the fat source and wholly cow that is good too.

    Looked at the increasing price of granola in the shops and decided to try and make my own. I used your recipe asa baseline, replaced the maple syrup with honey and added flaxseeds and sesame seeds…and walnuts..because my husband smelt it cooking and loves walnuts!

    Try Schmidt’s! It’s the only natural deoderant that has ever worked for me. There are a few other new brands out with the same types of formulas that I’m tempted to try sometimes… but I definitely love Schmidt’s fragrance free and lavendar-sage versions.

    Also, this is my favorite granola recipe! It’s SOOOO good and so adaptable.

    I have tried a few different granola recipes and this is by far our favorite! The directions are so clear even the extra tips are super helpful. And such great advice to freeze some. With this forced working from home, the bowl on the counter is too tempting!

    Hey! I love this recipe, tried it out with whatever ingredients I’ve had during this lockdown, and its now my daily yogurt bowl.
    I recently found apricots and added 1 cup to the recipe, and that’s made the granola a little wet and sticky. What would you suggest I do to ensure the entire batch lasts me long for my breakfasts? Would storing in the refrigerator help? Or, is the freezer the only answer to this?

      Hi! Did you add dried apricots or fresh? If dried, just add once cooled. Store the granola in an airtight container at room temperature for 1 to 2 weeks, or keep it in the freezer for longer shelf life.

        I added dried apricots, but I added them to the granola recipe and baked them along with everything. However, I added prunes instead of the other other dried fruit. Would you suggest I change it for the next batch?

    I bought a huge jar of honey and realized I need to do something with it This recipe came out much better than other recipes I’ve tried (added raisins). Put on top of plain greek yogurt and sliced banana and it was delicious.

    I do love your muffins recipes! And on this one, I loved what I could salvage; most of it burned black on the bottom. I followed the recipe, stirred midway through and took it out 4 minutes early. So bummed. Trying again today. Will use a pan – think lasagna pan – vs a flat sheet with parchment, will reduce oven heat and watch like a hawk! Any other suggestions welcome!

    This is a great base recipe for riffing… I added Pepitas, Sunflower Seeds and Golden Flax seeds and it came out great. I did use grapeseed oil in place of coconut/olive oil since it’s what I had, and it turned out just fine. Thanks for posting!

    PS, I don’t wear deodorant at all… Not an issue unless I try to wear synthetic fiber shirts, which I avoid as much as possible.
