Today marks fifteen years since my first post on Cookie and Kate. This date usually passes by without much fanfare, but fifteen years! Wow, my babyโ€™s almost ready to drive a car. This blog really is my baby.

Letโ€™s shout happy birthday with this fresh mango salsa recipe!ย Itโ€™s irresistibly sweet and spicy,ย super simple to make, and outrageously delicious.ย Plus, itโ€™s so colorful that it almost looks like confetti up close.

Come to think of it, salsa is the perfect anniversary recipe since my first recipe was for salsa. That post broke records for this blog back then. Three comments in one day!

Thank you for visiting, commenting and sharing my recipes with your friends and family. I literally wouldnโ€™t have posted more recipes if it werenโ€™t for those comments way back then. Youโ€™re the best.

Mango Salsa Ingredients

Youโ€™ll need only six basic ingredients to make this easy mango salsa: ripe mangos, red bell pepper, red onion, cilantro, jalapeรฑo and lime. If youโ€™re new to preparing mango, check out my guide to cutting mangos.

Uses for Mango Salsa

This mango salsa would be fantastic on fish tacos or just about any fresh, Mexican-themed dish, really. I can confirm that it goes well with chips, guacamole and black bean tacos. It was a big hit at my friendโ€™s potluck dinner!

You could also serve it on salad or just eat it straight out of the bowl as a salad. Itโ€™s that good.

This simple and colorful mango salsa is super easy to make! Itโ€™s sweet, spicy and absolutely delicious. Serve this fresh mango salsa with chips, on tacos or salads, or as a salad itself. Itโ€™s that good. Recipe yields about 3 cups salsa.

Ingredients

  • 3 ripe mangos, diced (how to cut a mango)
  • 1 medium red bell pepper, chopped
  • ยฝ cup chopped red onion
  • ยผ cup packed fresh cilantro leaves, chopped
  • 1 jalapeรฑo, seeded and minced
  • 1 large lime, juiced (about ยผ cup lime juice)
  • โ…› to ยผ teaspoon salt, to taste

Instructions

  1. In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeรฑo. Drizzle with the juice of one lime.
  2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For the best flavor, let the salsa rest for 10 minutes or longer.

Notes

Mango salsa adapted from the mango pico in my Thai mango cabbage wraps.

Storage suggestions: Honestly, Iโ€™ll be amazed if you have any salsa leftovers! You can store the salsa in the refrigerator, covered, for several days. It will be best fresh, though.

I made this salsa to go with salmon to celebrate Valentineโ€™s day โ€“ such a pretty dish! And very yummy too. Tonight the leftovers will be fish tacos. Thank you!

  2. Nadira

I would also recommend adding avocado, cucumber, cherry tomatoes and a little drizzle of olive oil for an extra boost of goodness!

  3. Dennis O'Brien

I made this salsa to go with mahi mahi tacos (thefoodphysician.com) and was amazed at how well it all went together! That you C+K.

    1. Lisa

I made these with tempura shrimp and mango salsa along with the cabbage slaw, cilantro lime sauce and toppings. There were no leftovers! Thank you so much for the inspiration.

  5. Nancy Johnson

Where have you been all my life and why did it take so long to find you? I canโ€™t wait to try all your recipes, starting with all your salsa recipes. I love all different kinds of salsas.

    1. Cookie and Kate

Hi Nancy, so glad youโ€™re here!

  6. Katie

This sounds delicious! Do you think the cilantro could be substituted with mint? We have someone with a cilantro aversion in our extended family.

    1. Cookie and Kate

      Hi Katie,

Yes, it would change the flavor profile, but mint and mango will work together well. If you give it a try, please share what you think!

  7. Lindsey

    Will frozen mango chunks work?

    1. Cookie and Kate

Hi Lindsey, I prefer the texture of fresh mango, but you can use frozen, and that means you donโ€™t have to guess if the mango is ripe. If you try it please share how it turns out.

      1. Dee

Couldnโ€™t get fresh mango โ€“ out of season โ€“ so Iโ€™ll let you know how the frozen mango goes!

  8. Kelly

    Congratulations! โ€ฆand yum!

  9. Bran Di

Amazing! Served with blackened salmon and jicama slaw.

  10. Janet

Nobody ever asks me to โ€œbring your special signature dishโ€ Well, they will now! I shoiuld have just served it with 4 big spoons and let the gals go at it! It was quite the hit! I added some chunks of pineapple because I didnt have enough mangoes. The pineapple is a nice touch. Iโ€™m making it again tomorrow. I donโ€™t know if I should add some black beans and cornโ€ฆor just leave well enough alone. I have a reputation to uphold nowโ€ฆI think Iโ€™ll leave it as is! Thanks so much for sharing this reccipe

  11. Anne Wesley

    just made it tonight..
.excellent! made with mangoes from our backyard tree.

  12. Joey

I just made this to take as an appetizer to a friendโ€™s house tonight, if there is any left to take. I canโ€™t stop eating it, it is that good.

  13. Sharon

Hello. Mangoes are available in many varieties and sizes. Would approx 1.75-2.0 cups diced be an appropriate amount? Thanks

    1. Cookie and Kate

Yes, 1.5 to 2 cups should be the right proportions for the other ingredients.

  14. Linda

Can this be preserved through the canning process?

    1. Cookie and Kate

Hi Linda, I recommend always using a recipe from a reputable source such as a local extension office, Ball Jar canning, etc. to ensure that the recipe and method meets food safety instructions.

  15. Heidi

We made this for a taco bar for a party and it was a hit! So yummy!

  16. Brea

What would be a good substitute for the cilantro? Multiple people in my family with an aversion to cilantro.

    1. Cookie and Kate

Hi Brea, you can simply omit, or try mint if you enjoy its flavor.

  17. Nancy Flintoft

I love your recipes. How far ahead can I make your mango salsa? Or should I leave it to just before serving? Making pickerel tacos on Monday.

    Thank you.

    1. Cookie and Kate

Hi Nancy, I think you could make it one day ahead. Itโ€™s best fresh, but after itโ€™s had a little time to marinate.

  18. Sue

Love your site, love the freshness of the ingredients. My friend just brought me 6 big florida mangos, I will be making mango salsa for fish and fish tacos and mango chutney for the winter. Thanks, Sue

  19. alexis

This mango salsa was a huge hit in my home โ€“ used it as a dip and also paired with grilled salmon. thanks for the recipe!

Do you recommend a particular variety of mayo? Your pictures show what appears to be a champagne variety and Iโ€™m wondering if the more common variety (donโ€™t know the name) I see in the grocery store would be ok.

    1. Cookie and Kate

Hi Alexis, yes I have been enjoying Ataulfo mangoes (also known as honey or Champagne). I explain the difference in my post with tips on how to cut a mango!

  20. Em

Could you use this recipe alongside jerk chicken?

    1. Cookie and Kate

Hi Em, I think the mango would complement the flavors of jerk sauce.
