mango salsa with tortilla chips

Today marks fifteen years since my first post on Cookie and Kate. This date usually passes by without much fanfare, but fifteen years! Wow, my baby’s almost ready to drive a car. This blog really is my baby.

Let’s shout happy birthday with this fresh mango salsa recipe! It’s irresistibly sweet and spicy, super simple to make, and outrageously delicious. Plus, it’s so colorful that it almost looks like confetti up close.

Come to think of it, salsa is the perfect anniversary recipe since my first recipe was for salsa. That post broke records for this blog back then. Three comments in one day!

Thank you for visiting, commenting and sharing my recipes with your friends and family. I literally wouldn’t have posted more recipes if it weren’t for those comments way back then. You’re the best.

Mango Salsa Ingredients

You’ll need only six basic ingredients to make this easy mango salsa: ripe mangos, red bell pepper, red onion, cilantro, jalapeño and lime. If you’re new to preparing mango, check out my guide to cutting mangos.

Uses for Mango Salsa

This mango salsa would be fantastic on fish tacos or just about any fresh, Mexican-themed dish, really. I can confirm that it goes well with chips, guacamole and black bean tacos. It was a big hit at my friend’s potluck dinner!

You could also serve it on salad or just eat it straight out of the bowl as a salad. It’s that good.

This simple and colorful mango salsa is super easy to make! It’s sweet, spicy and absolutely delicious. Serve this fresh mango salsa with chips, on tacos or salads, or as a salad itself. It’s that good. Recipe yields about 3 cups salsa.

Ingredients

  • 3 ripe mangos, diced (how to cut a mango)
  • 1 medium red bell pepper, chopped
  • ½ cup chopped red onion
  • ¼ cup packed fresh cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime, juiced (about ¼ cup lime juice)
  • ⅛ to ¼ teaspoon salt, to taste

Instructions

  1. In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.
  2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For the best flavor, let the salsa rest for 10 minutes or longer.

Notes

Mango salsa adapted from the mango pico in my Thai mango cabbage wraps.

Storage suggestions: Honestly, I’ll be amazed if you have any salsa leftovers! You can store the salsa in the refrigerator, covered, for several days. It will be best fresh, though.

Could I use frozen mangoes if I don’t have fresh? Or will that negatively affect the texture?

    1. Kate

Fresh are best here. I believe others have used frozen. Check the comments to see what they suggest. I would likely drain some juice as it thaws.

  2. Theresa

I have to say when you can grab some straight from mixing ingredients and get this flavor before refrigeration you know you have a Perfect recipe. It tastes so good with my lime tortilla chips. Thanks for sharing

  6. Shawn

Love the recipe! I added a bit of cubed avocado as well to smooth out the taste of the peppers and onion. This salsa goes well on baked potatoes and chicken.

  7. Marianne Harris

Forget cilantro and it’s perfect! Especially with salmon.

  8. Ellen

I make mine the same way only I add black beans & leave out the cilantro because I hate it. I was looking to see if you add chili powder. I usually add a speck.

    1. Kate

      Thanks for sharing, Ellen!

  9. Denika Andersen

This was delish. I made it for a staff meeting and the was zero leftovers! I did however add a few things, an avocado and half of a fresh pineapple (mangos were not quite ripe enough)

    1. Kate

      Great to hear, Denika!

  10. Rebecca

I am not a big mango fan but the salsa is delicious!

I made this for a backyard barbecue and salsa contest and it was the hit of the party!! First Place out of seven salsas!!
At first I wondered if I had made too much, but they ate it all!!

    1. Kate

I’m happy it was all eaten! Thanks for your review, Victor.

    1. Kate

I’m excited you loved it, Erin!

  23. Sarah C

This is amazingly delicious!!! I doubled the recipe and made it for 15 family members, and they RAVED about it. I could have eaten it with a spoon, and my nine-year-old son did!

    1. Kate

I’m glad everyone loved it, Sarah!

  24. Rachel

So simple and so delicious! I somehow chose the most perfectly ripe mangoes to use in this and it blew everyone (including me) away. Next time I’ll probably throw a Serrano in there as well (because I’m a weirdo), but for the regular folks I’m sure the jalapeno was quite enough. Thanks Kate!!

    1. Kate

I think a little extra spice sounds great! Thanks for your review.

  25. Joanna

Made this to accompany BBQ Pork Fillet for entertaining but left out the coriander/cilantro for personal taste reasons. Absolutely delicious, doubled the recipe to serve 20 and it really brightened up the food presentation too!

    1. Kate

Thank you for your review, Joanna!

  26. Ginny

Delicious! Super ripe yellow, Champagne mangoes at 0.58 cents apiece were perfect for this recipe. Had to substitute dried parsley for the cilantro & pickled jalapeño slices for the fresh, but it was still exceptionally yummy. Thanks so much for sharing :)

    1. Kate

      You’re welcome, Ginny!

  27. Sandy

Excellent. It was peach season here so I followed the recipe but used peaches instead of mangoes. I also had lots of avocados on hand so added one. Will definitely make this again.

    1. Kate

      Thank you, Sandy!

  28. Charlene Biltz

This is one of the prettiest dishes I have ever made. The bright colors look great for summer get-togethers. My only problem was cutting the mangoes into bits. A ripe mango just doesn’t have the proper consistency. BTW, tastes as good as it looks!!

    1. Kate

I’m happy you enjoyed it! Yes, mangos can be so tricky!

  29. Mia Newell

Such an easy and delish recipe! Piled it on top of Caribbean chicken. Perfect summer addition and healthy!

    1. Kate

Thank you for your review, Mia!

  30. Kris Parker

I made this for a Girls Weekend and I knew that some people didn’t like cilantro so I substituted parsley and everyone loved it! Thanks

    1. Kate

      You’re welcome, Kris!

  31. Leigh

    Great on eggs too!

    1. Kate

      Thanks for the idea, Leigh!

  32. Mary Ellen

Added red pepper (4strips chopped),and a ripe avocado also chopped. I did not use a jalapeño pepper . I mixed a lil orange juice with the lime juice. Served it over Grilled
    Salmon. It was delicious.

    1. Kate

Thank you for sharing how you served this, Mary!

  33. Margaret S Berglund

Made with and without jalapenos and both were great. A refreshing tasty treat

Amazing Recipe. I needed a little more heat. I added 3 additional jalapenos. There was none left after our company left. I was hoping for leftovers. I will have to make more next time.

  40. Holly

I was looking for a recipe that I could enjoy with my husband who for some reason does not like fruit on his fish!?!? I made mahi mahi for him without the salsa and the same for me with it and I have made it again and again since then because we both love it!

Had a picnic with some friends on Saturday 4/18/20 and had this to start with some tortilla chips. It. Was. Gone. Very good, tasty, and fresh.
I made very minor changes to the recipe, adding an extra mango and a sweet red pepper to go along with the red bell pepper. I cut up the peppers first and sprinkled them with salt to make them sweat and bring out their flavor while I was cutting everything else. Absolutely delicious.

    1. Kate

That’s great! Than you for sharing.
